Ingredients

Scale
  • 1 cup (225g) unsalted butter, melted
  • 2 cups (400g) granulated sugar
  • 4 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • 1 cup (85g) unsweetened cocoa powder
  • 1 cup (125g) all-purpose flour
  • ½ teaspoon salt
  • ½ teaspoon baking powder
  • ½ cup (115g) unsalted butter, softened
  • 2 cups (240g) powdered sugar, sifted
  • 2 tablespoons heavy cream
  • 1 teaspoon peppermint extract
  • Green gel food coloring, a few drops
  • Optional: Shamrock sprinkles or edible decorations for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your 9×13-inch pan or line it with parchment paper for easy removal.
  2. In a large bowl, whisk together the melted butter and granulated sugar until smooth and glossy.
  3. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. Sift together cocoa powder, flour, salt, and baking powder in a separate bowl.
  5. Gradually fold the dry ingredients into the wet mixture until just combined—do not overmix.
  6. Pour the batter evenly into the prepared pan and smooth the top with a spatula.
  7. Bake for 25-30 minutes, or until a toothpick inserted near the center comes out with a few moist crumbs.
  8. While brownies bake, prepare the mint frosting: beat softened butter until creamy in a medium bowl.
  9. Gradually add powdered sugar, alternating with heavy cream, until fluffy.
  10. Mix in peppermint extract and green gel food coloring, adjusting flavor and color as desired.
  11. Once brownies have cooled completely on a rack (45-60 minutes), spread the mint frosting evenly on top.
  12. Sprinkle shamrock decorations or edible glitter if desired.
  13. Cut into squares and serve.

Notes

Do not overbake to maintain fudgy texture; use room temperature eggs for smoother batter; melt butter gently to avoid bitterness; fold dry ingredients gently to keep batter light; chill frosting briefly if too soft before spreading; flavors improve after resting overnight.
