  • 1 bunch asparagus (about 1 lb / 450 g), trimmed
  • 1 bunch radishes (about 8-10), halved or quartered depending on size
  • 3 tablespoons extra virgin olive oil
  • 3 cloves garlic, minced
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons chopped fresh thyme
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • Zest of 1 lemon (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Peel the carrots and cut them into 2-inch sticks, trim the woody ends off the asparagus, and halve or quarter the radishes depending on size. Keep pieces roughly the same size for even roasting.
  3. In a large mixing bowl, combine the vegetables with olive oil, minced garlic, salt, and black pepper. Toss until well coated.
  4. Spread the vegetables evenly on a rimmed baking sheet in a single layer. Roast in batches if necessary to avoid overcrowding.
  5. Roast for 20-25 minutes, flipping the vegetables halfway through, until golden and crispy on the edges and tender inside.
  6. Immediately sprinkle the fresh parsley, thyme, and lemon zest over the hot vegetables once out of the oven.
  7. Gently toss the vegetables on the baking sheet or transfer to a serving dish. Adjust salt and pepper to taste.
  8. Optional: Let the vegetables rest on the baking sheet for 5 minutes before serving for extra crispiness.
