  • 2 large boneless, skinless chicken breasts (pounded to even thickness)
  • 1 cup almond flour
  • ½ cup finely grated parmesan cheese
  • 2 large eggs, beaten
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 23 tbsp olive oil
  • 1 cup marinara sauce (low-sugar preferred)
  • A handful fresh basil, chopped
  • 1 cup shredded mozzarella cheese

Instructions

  1. Place chicken breasts between two sheets of parchment paper or plastic wrap. Using a meat mallet or rolling pin, gently pound them to about ½-inch thickness.
  2. In a shallow bowl, combine almond flour, parmesan, garlic powder, Italian seasoning, salt, and pepper. Stir well.
  3. Beat eggs in another shallow bowl until smooth.
  4. Dip each chicken breast into the egg wash, letting excess drip off. Press firmly into the almond flour mixture on both sides until fully coated. Set aside.
  5. Heat olive oil in a large skillet over medium heat. Add coated chicken breasts and cook for 4-5 minutes on each side until golden brown and crispy.
  6. Preheat oven to 375°F (190°C). Transfer chicken to a baking dish. Spoon about ½ cup marinara sauce over each piece, then sprinkle with shredded mozzarella and chopped fresh basil.
  7. Bake for 12-15 minutes until cheese is melted and bubbly and chicken reaches an internal temperature of 165°F (74°C).
  8. Let the chicken rest for 5 minutes before serving. Garnish with extra fresh basil if desired.

Notes

If cheese browns too quickly, tent loosely with foil. Avoid overcrowding the pan when frying to keep the crust crispy. Let chicken rest after baking to keep it juicy. Use fresh mozzarella for better melt and less water release. For dairy-free, substitute vegan cheese and use coconut yogurt or flax egg as egg replacement.
