A quick and easy recipe featuring crispy baked tater tots layered with seasoned ground beef, melted cheese, and fresh toppings for a crowd-pleasing snack or casual meal.

  • 1 (32-ounce / 907g) bag frozen tater tots
  • 2 cups (200g) shredded sharp cheddar cheese or cheddar and Monterey Jack blend
  • 1 pound (450g) lean ground beef (optional)
  • 1 small yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup diced tomatoes
  • 1/2 cup sliced black olives
  • 1/3 cup chopped green onions
  • 1/4 cup fresh cilantro leaves
  • 1/2 cup sour cream
  • Sliced jalapeños, fresh or pickled (optional)

Instructions

  1. Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper and spread frozen tater tots in a single layer. Bake for 25-30 minutes, flipping halfway through, until golden and crispy.
  2. While tots bake, heat a medium skillet over medium heat and cook ground beef for 5 minutes until browned. Drain excess fat if needed.
  3. Add diced onion and minced garlic to the skillet with beef. Sauté for 3-4 minutes until softened and fragrant.
  4. Season beef mixture with chili powder, cumin, smoked paprika, salt, and pepper. Stir and cook for another 2 minutes.
  5. Remove skillet from heat. Shred cheese if not already shredded.
  6. Once tater tots are crispy, layer half the tots on the baking sheet, sprinkle half the beef mixture, then half the cheese. Repeat for a second layer.
  7. Bake the loaded tray for 5-7 minutes until cheese is melted and bubbling.
  8. Remove from oven and top with diced tomatoes, black olives, green onions, jalapeños, cilantro, and dollop or drizzle with sour cream.
  9. Serve immediately while warm.

Notes

Flip tater tots halfway through baking for even crispiness. Use freshly shredded cheese for better melting. If cheese isn’t melting evenly, cover with foil briefly or broil on low for 1-2 minutes watching carefully. Avoid overcrowding tots on baking sheet. Reheat leftovers in oven to maintain crispiness; avoid microwave.
