  • 1 teaspoon dried thyme (or fresh)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a small bowl, whisk together honey, balsamic vinegar, and minced garlic until well combined. Set aside.
  3. Pat the chicken thighs dry with paper towels. Season both sides generously with salt, pepper, dried thyme, and smoked paprika if using.
  4. In a large mixing bowl, combine carrots, bell pepper, zucchini, red onion, and cherry tomatoes. Drizzle with olive oil, season with salt and pepper, and toss until evenly coated.
  5. Spread the vegetables out evenly on a rimmed baking sheet or roasting pan. Nestle the chicken thighs skin-side up among the vegetables, ensuring none overlap.
  6. Brush the chicken thighs generously with the honey balsamic glaze, reserving a little glaze for basting later.
  7. Roast in the preheated oven for 25 minutes. Remove and baste the chicken with the reserved glaze. Gently flip the vegetables to encourage even roasting.
