Creamy Lasagna Soup with Ricotta Bliss

A cozy, easy-to-make soup that captures all the comforting flavors of classic lasagna with a creamy ricotta finish. Perfect for quick weeknight dinners or casual gatherings.

  • 1 pound Italian sausage, casings removed (mild or spicy)
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 (28 oz) can crushed tomatoes
  • 4 cups chicken broth (low sodium preferred)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon crushed red pepper flakes (optional)
  • Salt and freshly ground black pepper, to taste
  • 6 ounces broken lasagna noodles or any wide pasta pieces
  • 1 cup whole milk ricotta cheese
  • ½ cup freshly grated Parmesan cheese
  • 1 tablespoon fresh parsley, chopped (optional)
  • Freshly ground black pepper, to taste
  • Fresh basil leaves (for garnish)
  • Extra Parmesan cheese (for garnish)

Instructions

  1. Heat a large Dutch oven over medium heat. Add the Italian sausage, breaking it apart with a wooden spoon. Cook until browned and cooked through, about 7–10 minutes. Drain excess fat, leaving a little for flavor.
  2. Add the chopped onion to the sausage and cook until softened and translucent, about 3 minutes. Add minced garlic and cook for another 30 seconds until fragrant.
  3. Stir in crushed tomatoes, chicken broth, oregano, basil, and red pepper flakes if using. Season with salt and pepper. Bring to a simmer and cook for 10 minutes.
  4. Add broken lasagna noodles directly into the simmering soup. Cook uncovered until pasta is tender but not mushy, about 10 minutes, stirring occasionally.
  5. While pasta cooks, mix ricotta cheese, Parmesan, chopped parsley, and black pepper in a small bowl until smooth and creamy.
  6. Turn off heat and gently stir in most of the ricotta mixture, saving some to dollop on top when serving.
  7. Ladle soup into bowls, add a dollop of remaining ricotta bliss, sprinkle fresh basil leaves and extra Parmesan on top. Serve hot.

Notes

Brown the sausage well for rich flavor. Avoid overcooking garlic to prevent bitterness. Stir in ricotta off the heat to avoid curdling. Adjust soup thickness by adding broth if too thick or simmering longer if too thin. If soup thickens after resting, loosen with broth or water before serving.
