A rich and creamy keto-friendly chicken bake featuring tender chicken, melted cheese, and crispy bacon, perfect for quick weeknight dinners or potlucks.

Ingredients

Scale
  • 2 pounds boneless, skinless chicken breasts, cut into bite-sized pieces
  • 8 slices thick-cut bacon
  • 8 ounces cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 2 stalks green onions, thinly sliced (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the bacon in a cold skillet over medium heat until crispy, about 8-10 minutes, flipping occasionally. Drain on paper towels and crumble into bite-sized pieces.
  3. Cut chicken breasts into bite-sized pieces and season lightly with salt and pepper.
  4. In a large bowl, combine softened cream cheese, shredded cheddar cheese, sour cream, chicken broth, garlic powder, and onion powder. Stir until smooth and creamy.
  5. Add the chicken pieces to the creamy mixture and stir to coat well.
  6. Fold in about two-thirds of the crumbled bacon, reserving some for topping.
  7. Spread the chicken mixture evenly in a 9×13-inch casserole dish.
  8. Bake uncovered for 25-30 minutes, or until chicken is cooked through and edges are bubbling golden (internal temperature should reach 165°F / 74°C).
  9. Remove from oven and sprinkle remaining bacon and sliced green onions on top.
  10. Let rest for 5 minutes before serving.

Notes

Soften cream cheese to room temperature to avoid lumps. Cook bacon slowly from a cold pan for best crispness. Use a meat thermometer to ensure chicken is cooked to 165°F. For extra crispiness, broil for 2-3 minutes at the end, watching carefully to prevent burning. Dairy-free alternatives can be used by swapping cream cheese and sour cream with coconut-based versions and nutritional yeast for cheddar.
