  • 1 can (14.75 oz / 418 g) cream-style corn
  • 1 cup (240 ml) sour cream (full-fat recommended)
  • 1/2 cup (115 g) unsalted butter, melted
  • 1 cup (120 g) all-purpose flour (can substitute gluten-free flour blend)
  • 1/4 cup (50 g) granulated sugar
  • 2 large eggs, beaten (room temperature)
  • 1 cup (120 g) sharp cheddar cheese, shredded
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish generously with butter or non-stick spray.
  2. In a large bowl, mix the drained whole kernel corn and cream-style corn.
  3. Stir in the sour cream and melted butter until well combined.
  4. In a separate bowl, whisk together the all-purpose flour, sugar, salt, and pepper.
  5. In a small bowl, lightly beat the eggs until just combined.
  6. Gradually add the flour mixture into the corn mixture, folding gently with a rubber spatula.
  7. Stir in the beaten eggs just until evenly incorporated.
  8. Reserve about 1/4 cup (30 g) of shredded cheddar cheese for the topping, and mix the rest into the batter.
  9. Pour the batter into the prepared baking dish, spreading it evenly.
  10. Sprinkle the reserved cheddar cheese evenly over the top.
  11. Bake for 45-50 minutes, or until edges are bubbly and golden brown and a toothpick inserted near the center comes out mostly clean.
  12. Let the casserole stand for 10 minutes before serving.

Notes

Do not overmix the batter once flour is added to keep a tender texture. Use room temperature eggs to avoid lumps. Drain whole kernel corn well to prevent sogginess. Freshly shredded sharp cheddar melts better than pre-shredded. Let casserole rest 10 minutes before slicing. Tent with foil if top browns too fast. Adjust baking time if using a smaller baking dish.
