  • ½ teaspoon freshly ground black pepper

Instructions

  1. Place the 6 thick-cut bacon slices in a cold medium skillet. Turn the heat to medium and cook until crispy, about 8-10 minutes, flipping occasionally. Transfer to paper towels to drain excess fat. When cool, chop into bite-sized pieces. Leave a bit of bacon fat in the pan for extra flavor.
  2. In a medium saucepan over low heat, add the softened cream cheese and 1 cup of beer. Stir gently until the cream cheese melts completely and the mixture is smooth, about 4-5 minutes. Keep the heat low to prevent curdling or burning.
  3. Stir in garlic powder, onion powder, Worcestershire sauce, mustard powder, salt, and black pepper. Mix well to combine all the flavors evenly. If the dip seems too thick, add a splash more beer to loosen it.
  4. Gradually add the shredded cheddar cheese, about ½ cup at a time, stirring continuously. Allow each addition to melt fully before adding more. This slow melting creates an ultra-smooth texture and takes about 7-8 minutes total.
  5. Fold the chopped crispy bacon into the cheese dip, reserving a few pieces for garnish if desired.
  6. Remove the saucepan from heat. Spoon the dip into your serving bowl, sprinkle with reserved bacon and chopped fresh chives for a pop of color and flavor.
  7. Serve warm immediately with your favorite dippers like crusty bread, pretzels, or fresh veggies. If it starts to firm up, warm gently on low heat while stirring.
